tomato, arugula, goat cheese frittata
This joined rotation because I was looking for something quick and easy. Frittatas are a great way to keep it simple, yet include an array of veggies and maintain a good protein load with the egg. I use half the amount of goat cheese the recipe recommends as we are not HUGE goat cheese fans, more just a dabble.
Roberta’s pizza dough
Our family has been on a pizza kick recently. We have made a lot of pizza doughs in the past - this is by far, the best! My oldest daughters favorite is a Margherita pizza. My husband and I love a good prosciutto/arugula pizza. We love pizza because the entire process is a family affair.

This recipe is easy, quick and super flavorful! A perfect weeknight dinner. My husband voted for this to be added to the website within a few bites. Definitely a winner!

summer nicoise salad
I cannot wait to make this again when corn is in season! I made this (minus the corn) for a quick Friday night dinner and it was a crowd pleaser…. husband, 2 year old and myself! Will absolutely be making this again soon.

If you know me at all, you know I have a sweet tooth. I am firm believer that ‘moderation is key’ and allow myself to indulge when feeling the need. This is a decadent, rich lava cake that surprisingly was super simple! Yet, looks extremely professional. Enjoy this sweet treat for your next dinner party!

The garlic, capers and tuna in this recipe blend together so deliciously! I love this spin on a Puttanesca (without the tomato) for a light, summer pasta. Enjoy!
*I cut the anchovy amount in half or omit all together as I am not a huge fan - my husband loves them, so we compromise :)

When you live in Colorado and have a garden, there is a high likelihood that you will have loads of zucchini. It grows so well here! Each summer, I search for more and more ways to utilize our bounty. This is now one of our favorites.
